New York Style Oreo Cookies

125g butter, 100g light brown sugar, 75g granulated sugar, 1 large egg, 1 tsp vanilla extract (optional) 250g plain flour, 75g crushed Oreos (you can swap them with any similar biscuits – Burbons, custard creams, ginger nuts etc), 1 ½ tsp baking powder, ½ tsp bicarbonate of soda, ½ tsp salt, 150g white choc chips, 150g milk choc chips, 75g chopped Oreos (or whatever you are using)

Equipment:  mixing bowl, whisk, baking tray, sheet of baking/greaseproof paper

You can use whatever you want instead of oreos but we need 75g crushed (you can blitz in food processor or pop into a plastic freezer bag and bash with a rolling pin) and 75g chopped into pieces

Raspberry and White Chocolate Loaf

220g Self Raising Flour, 220g caster sugar, 220g butter, 4 eggs, 150g white choc chips (or white choc chopped up), 150g Raspberries (fresh or frozen)

Equipment:  Mixing bowl, whisk, 2 lbs loaf tin or approx. 8” cake tin

You could replace the raspberries with blueberries or milk choc chips or just leave them out if you don’t want to use raspberries
